Callie, Greek for “the most beautiful”

Chef Travis Swikard’s celebration of the Mediterranean, inspired by his time cooking at Chef Daniel Boulud’s New York restaurant, Boulud Sud. There, he immersed himself in the flavors of Greece, Spain, Italy, Morocco, and the Middle East, embracing the region’s diversity, generosity, and warmth.

At Callie, Swikard brings those influences home to San Diego, blending the spirit of the Mediterranean with the farmers, fishermen, and ingredients of Southern California. The result is Cuisine du Soleil: light, bright, and bold flavors that reflect the connection between land, sea, and season.

Since opening in 2021, Callie has been recognized by the Michelin Guide, Esquire, and Robb Report as one of the Best New Restaurants in America. Swikard has since expanded his culinary vision with Fleurette, Callie’s intimate sister restaurant, celebrating the French Mediterranean through the same devotion to seasonality and sense of place.
